I don't think that you can, it sets at 12 x 12 or 12 x 24 which is the size of the mats, if the image you are cutting fits on the paper you have on the mat it wouldn't matter what it set too. I put 8 1/2 x 11 paper on my 12 x 12 mat and cut just have to make sure you cut within your limits.

Put your cardstock in the bottom left of your mat. Then using the arrow keys on your Expression move the blade down and across so that it is sitting in the top right corner of your card stock. Now press the Set Paper Size button.

The new size will be shown in the Expression screen. This size isn't saved however, so you'll need to do that each time.

I use a lot of 8.5 x 11 paper in my machine. I saved the settings on a label and put it on my machine so I didn't have to think about the setting each time. If you put the paper on the bottom left of your mat, length wise- you should move left/right to 3 1/2 and in/out (up and down to me)- to 1. That should line up correctly for you!
