I am making a Family Birthday board and would like to seal it all with a clear coat. The wood is pine with acrylic paint and vinyl letters on top.

What would you suggest? Would Mod Podge work?

Mod podge will work if the item stays indoors. If it's going outside you can varnish it

I did pick up Mod Podge as it will be staying indoors.
