What is the general size that I should use in the craft room when cutting the pre-made cards like for Father's day, Mother's day, or simple cards?? I wish they had a default size so I wouldn't be so clueless. Any help would be great!! I normally make my cards 5.5" x 4.25".

I was hoping someone would answer this for you. I have the same problem, my cards and envelopes never match. I have a stash of envelopes in the drawer that I figure I may as well keep, perhaps they will fit something someday.

Use the Default Height under the keypad in CCR. When selecting a size, even when using the size dial on your Cricut, you are selecting the height of the image. And, you want to make sure you have Relative size selected {the Aa } and not Real size {where both upper and lower case "A" are the same size}. These examples are from Simple Cards.
