I'm relatively new to the CCR but on the Gypsy there is a way to "Hide" part of an image so it doesn't cut. I have found this extremely helpful when I only want to cut either one piece of an image or change the image a bit. (kind of like using ungroup and selecting only the parts you want). Is there a way to do this in the CCR?

Yes, CCR also has Hide Contour. You'll see the Hide Contour button on the bottom left of your image when you have placed it on the mat. Click that then hover over the line you want to hide and left click.

Just a tip..when hiding parts, zoom in to be able to see the images better because sometimes there are cuts that can't be seen on the smaller screen. And to hide them...once you have clicked HIDE CONTOUR, move your mouse over the parts you want to delete, they will turn red and that is when ya click on it to earse the cut.
